Almond ROCA Caramel "Brookies"

Description: Entrant to the 2015 Washington State Fair ROCA Elegance Baking and Confection Contest.

Yield: 15 servings

Ingredients

Brownies

  • 1/4 cup All-Purpose flour

  • 1/2 tsp baking soda

  • 3 oz semisweet chocolate

  • 1 1/2 sticks butter

  • 1/2 cup sugar

  • 1 cup brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

Cookies

  • 1 1/4 cups All-Purpose flour

  • 1/4 tsp baking soda

  • 1 pinch of salt

  • 1/2 cup brown sugar

  • 1/2 cup butter

  • 1 egg

  • 1 tsp vanilla extract

  • 1 cup chocolate chips

Other

  • 5 pieces chopped Almond ROCA

  • 1/3 cup caramel sauce, prepared or store bought

 

Directions

  • Preheat oven to 325 degrees F. Grease a 9x13 baking pan.

  • Combine flour, baking soda, salt, and cocoa powder.

  • Melt the semi-sweet chocolate together with butter.

  • Beat sugars and eggs together then add chocolate mixture and vanilla. Add flour mixture and pour into pan.

  • Bake for 20 minutes. Brownies will be undercooked. 

  • Add about 1/4 cup melted caramel sauce and crushed brownies and crushed ROCA to top of brownies

  • Mix together flour, salt, and baking soda in a bowl.

  • Beat sugars with butter. Add eggs and vanilla.

  • Add flour mix and chocolate chips. Stir to combine.

  • Spread cookie dough over top of the undercooked brownies

  • Bake for 10-15 minutes until cookie is golden brown

  • Cut into squares and top with caramel sauce and remaining crushed Almond ROCA
