Macadamia ROCA Shortbread

Description: This 3rd place winner of the 2013 Washington State Fair Kids Baking Contest takes shortbread cookies up a notch with Macadamia ROCA added to the mix.

Total Time: Approx. 1hr 25 min

Yield: Approx. 30 Cookies

Ingredients

  • 1 cup butter, softened

  • ¾ cup powdered sugar

  • 1 teaspoon clear vanilla

  • 2 ½ cup all-purpose flour, sifted

  • 10 Macadamia ROCA pieces, crushed

 

Directions

  1. In a non-stick baking mold with mini cups, place 3 or 4 milk chocolate chips.

  2. Melt in microwave on medium 30-60 seconds, only until melted.

  3. Spread across bottom and up sides to form cups.

  4. Place in refrigerator to cool completely until hardened.

  5. In a small bowl, blend together melted butter and graham cracker crumbs, reserving a small amount for later.

  6. In cooled chocolate cups, sprinkle and press graham cracker mix covering bottom of cups.

  7. Unwrap Dark ROCA and crush into smaller pieces.

  8. Fill each cup with Dark ROCA.

  9. Pour caramel sauce on top, covering the ROCA.

  10. Sprinkle tops with remaining graham cracker crumbs.

  11. Drizzle melted white chocolate on top to garnish.

  12. Remove from mold and place on serving dish.
