Almond ROCA Caramel "Brookies"

Description: Entrant to the 2015 Washington State Fair ROCA® Elegance Baking and Confection Contest.

ingredients

Brownies

  • 1/4 cup All-Purpose flour
  • 1/2 tsp baking soda
  • 3 oz semisweet chocolate
  • 1 1/2 sticks butter
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract

Cookies

  • 1 1/4 cups All-Purpose flour
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Other

  • 5 pieces chopped Almond ROCA
  • 1/3 cup caramel sauce, prepared or store bought

DIRECTIONS

  1. Preheat oven to 325 degrees F. Grease a 9x13 baking pan.
  2. Combine flour, baking soda, salt, and cocoa powder.
  3. Melt the semi-sweet chocolate together with butter.
  4. Beat sugars and eggs together then add chocolate mixture and vanilla. Add flour mixture and pour into pan.
  5. Bake for 20 minutes. Brownies will be undercooked. 
  6. Add about 1/4 cup melted caramel sauce and crushed brownies and crushed ROCA to top of brownies
  7. Mix together flour, salt, and baking soda in a bowl.
  8. Beat sugars with butter. Add eggs and vanilla.
  9. Add flour mix and chocolate chips. Stir to combine.
  10. Spread cookie dough over top of the undercooked brownies
  11. Bake for 10-15 minutes until cookie is golden brown
  12. Cut into squares and top with caramel sauce and remaining crushed Almond ROCA
