Description: These wonderfully unique bar cookies are a delicious treat. This recipe won 1st place in the 2013 Washington State Fair Kids Baking Contest. Enjoy with a glass of milk.
1 cup fin grated coconut
1 cup Dark ROCA®, chopped
½ cup Chocolate chips
½ cup butter melted
1 ½ cup graham cracker crumbs
1 (14 oz) can sweetened condensed milk
Preheat oven to 350˚F
Blend melted butter and graham cracker crumbs, press into bottom of silicone baking pan or molds
Sprinkle coconut evenly on top of crumb base
Layer Dark ROCA® “chunks” as the next layer
Pour sweetened condensed milk evenly over ROCA®
Bake until blended and golden – 15-20 minutes
Remove from oven and let cool in pan or mold
Melt chocolate chips. Spread over half the bars. Cut (or remove from molds) and stack on top of side with melted chocolate.
